Minute Steak With BBQ Butter Sauce.

Ingredients:
?For the sauce:
?2/3 cup beef broth
?2 tablespoons barbecue sauce
?1 tablespoon cold butter
?hot sauce to taste
?freshly ground black pepper to taste
?4 (6-oz) fully trimmed top sirloin steaks
?salt and fresh ground black pepper to taste
?1 tablespoon vegetable oil
Preparation:
Whisk together the wet sauce ingredients in a small bowl, and toss in the butter. Season with hot sauce and freshly ground black pepper if desired.

Pound out the steaks between 2 pieces of plastic wrap, to a 1/4 inch thickness. Season on both sides with salt and fresh ground black pepper. Place a large cast iron or stainless steel skillet(s) over high heat. Add the oil to the pan and wait until it begins to smoke.

Add the steaks, and cook on high for about one minute per side for medium rare. For rare, try 30-45 seconds per side. For medium to medium-well, try 1:30 to 2 minutes per side. Remove the steaks to a warm plate, and cover very loosely with foil.

Leave the pan on high heat, and carefully add the sauce mixture. Cook stirring until the mixture boils and thickens slightly, about 3 minutes. Taste and adjust the seasoning. Serve the steaks with the barbecue butter sauce spooned over.
