It will work and great, but you will loose the butter flavor you would have if you used it.

You can use olive oil also IF you like the olive flavor in everything.

Olive oil is like garlic!! It is an acquired taste and I don't like either one.



Sure, it will be fine. What is your dish? Mushrooms soak up whatever they are cooked in- so if you're adding herbs or broth, it will get a lot of flavor from that and you won't miss the butter at all. If you want some butter flavor- you can use canola and use just a pat of butter.



They'd cook, but be missing the creaminess and flavor the butter imparts. If you're using this in a recipe, it'd probably be OK, but not just for sauteed mushrooms (as for a steak).

i've never tried it with canola oil but it's really good with olive oil, you can try that if you have it.
