* 1 medium apple, peeled and cubed
* 3 tablespoons butter or margarine
* 1 cup bread cubes
* 3 tablespoons sugar
* 1/4 teaspoon ground cinnamon

Directions
1. In a skillet over medium heat, saute apple in butter until tender, about 2-3 minutes. Add bread cubes. Sprinkle with sugar and cinnamon; mix well. Saute until bread is warmed. Serve immediately.

Bananas Foster Chimichangas

Ingredients
* 1/4 cup butter
* 3 firm bananas. sliced
* 1/2 cup brown sugar
* 2 tablespoons spiced rum
* 2 (10 inch) flour tortillas
* 1 cup vegetable oil for frying

Directions
1. In a large skillet over medium heat, melt butter . Stir in bananas and sugar, and stir until sugar is dissolved. Pour in rum and cook 1 to 2 minutes more. Spoon half the banana mixture onto each flour tortilla, and roll up, tucking in the ends, like a burrito.
2. In a large skillet, heat the vegetable oil over medium-high heat. Fry chimichangas until golden. Drain on paper towels. Serve warm.

a) rum syrup
1/2 C sugar
3/4 C water (or sub both with honey)
1 T lemon juice
3 T rum
Combine sugar and water. Bring to boil, continue for 5 minutes, stirring constantly. Remove from fire. When lukewarm, add juice and rum (I use with Savarin - look it up)

b) Banana Coupe
4 bananas
2 T sugar (or honey)
4 T orange juice
pinch cinnamon
1 C red Bordeaux wine

Cut bananas into 1/2 thick slices. Place in shallow dish. Sprinkle with sugar. Add OJ. Let stand in refrigerator for 1/2 hour. Serve in sherbet glass. Sprinkle with kirsch (or rum?)

c) Baked Apple
4 cooking apples
4 slices bread
4 t sugar
4 t butter

Peel and core. Cut slices of bread in circles. Place in buttered baking dish. Place apples on bread. In well in apples, place 1 t sugar. Cinnamon, as you like. Add t of butter on each. Bake at 375 for 30 minutes. Serve warm

As for the eggs and milk, I don't suppose you feel like looking up 'oeufs a la niege' (floating island) because I really don't feel like typing it out.
