Question: How to make Fudge?????????????????????????…
I'm trying to get a good recipe to make fudge... I heard it goes really well with vanilla ice cream and i want to give it a go to see if it works as well as people say it does. So, any suggestions?

Here is one that I give to anyone who is making fudge for the first time . It is almost impossible to mess up. It is the one my mother gave me to start with and I gave to my son to start with .

Ten Minute Fudge

1 1/3 c. sugar
1 1/2 pkgs. semi-sweet chocolate pieces
1/4 c. nuts ( optional )
2 tbsp. butter
2/3 c. evaporated milk
1 tsp. vanilla
1/4 c. chopped or small marshmallows
In a 2 quart saucepan , mix sugar butter and milk . Bring to a boil over med. heat . Boil 5 minutes stirring constantly . Remove from heat . Add chocolate and rest of ingredients . Beat vigorously until marshmallows melt . Pour into a greased 8x8x2 inch pan . Sprinkle with more nuts if desired . Cool and cut into squares .



When you say 'fudge', do you mean the chewy chocolate thing, or are you talking about a dessert? Because I'm not sure the first one would taste that nice with icecream...

I have heard people call the dessert chocolate self-saucing pudding 'chocolate fudge', so maybe that's what you mean? Here my recipe for it:

60g butter
1/2 cup milk
1 tsp vanilla
1 cup self-raising flour
3/4 cup castor sugar
1 tblspn cocoa + 1 tblspn for topping
2 cups hot water
3/4 cup brown sugar (topping)

Heat butter and milk in saucepan, stir until butter melts, add vanilla. Sift dry ingredients into basin, add butter mixture to well in centre, stir until smooth, pour into deep, greased 1 litre (2 pint) ovenproof dish. Sift mixed topping (extra cocoa + brown sugar) over, carefully pour hot water over. Bake in moderate oven 40 to 45 mins. [moderate = 350F / 180C]



How to make it

Mix butter, chocolate chips, marshmallows, vanilla and nuts (if desired) in the large mixing bowl.

Bring the milk and sugar to a rolling boil in the heavy pan and cook for 10 minutes, stirring occasionally.

Pour sugar and milk mixture over other ingredients in mixing bowl.

Stir until all ingredients are well blended and marshmallows, butter and chocolate chips are dissolved.

Pour fudge into buttered foil or baking pans.

Let fudge stand 24 hours before eating, or cover and store in refrigerator.
