Question: I need to make a wedding cake but can't use chocolate or vanilla, Help!?
The groom is allergic to one and the bride, the other. Any ideas?

The best wedding cake I have ever tasted was a Lemon cake with seedless black raspberry perserves mixed with Chambord between the layers with a lemon buttercream frosting



For flavour, some ideas could be
-carrot cake
-toasted almond (i would think most nuts could work for this)
-strawberry
-yellow/white - like a pound cake almost, and you can add whatever, like blueberries or mixed berries for flavour.
- banana
-chiffon
-red velvet
-citrus (some lemon and orange zest could be good, but I would think that of more of a summer wedding.)

As for frosting, traditional Italian Buttercream or maybe a nice cream cheese frosting would do great. A nutella frosting would pair really well with the banana. Whipped cream can work too.



Things You'll Need:
1/2 cup sugar 1/3 cup butter, margarine or shortening 3/4 cup maple syrup 2 1/4 cups all-purpose flour 3 tsp. baking powder 1/2 cup milk 3 egg whites 13-by-9-inch pan Nonstick cooking spray

In a large mixing bowl, cream together the sugar and butter until well-blended.

Add the maple syrup to the butter and sugar mixture and stir until incorporated.

Mix the baking powder into the flour in a separate bowl to avoid pockets of baking powder in the finished cake.

Alternate between adding the milk and the flour mixture to the butter mixture, stirring after each addition.

Beat the egg whites using an electric mixer in a separate bowl until soft peaks form. Soft peaks will form when the beaters are pulled up out of the egg whites and will then curl over.

After adding all of the milk and flour and stirring until the cake batter has a uniform color and texture, gently fold in the egg whites.

Spray the pan with nonstick cooking spray and pour the cake batter into the pan.

Bake the cake at 350 F for 45 to 60 minutes, or until a toothpick inserted in the center comes out clean.

Well, you could make layers of it with each kind and each person could eat the part the they're not allergic to. Or for example, if you made a 7-layer cake you could make each layer different flavors. Like Carrot, Chocolate, Vanilla, Strawberry, Lemon, Marble, etc. :)



make cupcakes..that way you can make all, but the two for the bride and groom. u would save money and time that way theirs are chocolate and vanilla, but try a health food store, where you can order a small cake or cupcakes just for them.



I do a lot of cakes, wedding cakes, too. I think you should sit down with your couple and ask them what they would like. There are a world of options out there, for some ideas walk down the cake mix aisle of the grocery store.



My wedding cake was an absolutely wonderful banana cake.

That could be an idea for you to use.
