Answers:

A restaurant will never let you know exactly how they make their menu items. I tried looking for Chicken Giovanni, but none of the recipes had pasta, red peppers or mushrooms and all had spinach and mozzarella. Also, I don't think that there is any cheese called Giovanni Cheese. The only place I found that had something similar to what you described is Old Chicago Pizza. I could not find their recipe. If you want a recipe for Chicken Giovanni, this is the I found:

Katie's Chicken Giovanni

Ingredients:

2 chicken breasts pounded

Fresh spinach

Juice from 1 lemon

Fresh rosemary

3 oz. of white wine

3 oz. of sherry

6 oz. chicken broth

Shredded mozzarella cheese

Salt and pepper to taste

Fresh garlic

Flour

2 oz butter

Preparation:

Melt butter in frying pan over medium to high heat.

-Lightly dust chicken in flour and place in pan.

-Add rosemary and some chopped up fresh garlic.

-Lightly brown both sides of chicken.

-Add wines and lemon juice.

-Lower heat and simmer.

-Add chicken broth and let simmer for a few more minutes longer.

-Meanwhile, heat the spinach in saucepan separately and put on top of each chicken breast, add mozzarella cheese and melt and serve.

hi ravi,

I just recently purchased a really interesting cooking recipe book which shows you how to make restaurant quality cooking directly from your own kitchen at home !

Perhaps this might be just what you need.

Take care.
