Well first of all, they typically edit out the hand washing and clothes changes and dish washing, etc.....so just because you did not see on the show it does not mean it did not happen.
AND YES....washing your hand, knifes, cutting boards, etc. is an absolute must in any kitchen.
I am a former restaurant and bar owner and I was a real ****** about my employees following the sanitary rules. I fired more than one employee over this subject.
Cross contamination is very common because the symptoms show up later (maybe the next few days) and people often do not associate their sickness with what happened yesterday while preparing a meal, but in fact most colds, flu, and other bugs such as salmonella are passed via computer keyboards, door knobs, coughing, and eating utensils and surfaces.
I love the show Chopped and have raised the issue of sanitation with my husband. They sweat and it drips off their face or they wipe it away with a kitchen towel then use that towel to wipe the plates. The judges complain loudly when anyone double dips as they taste the food but ignore other more serious infractions of sanitation.
The shows should set an example of sanitation however Paula Deen licks her fingers, double dips and pets her dog, Rachel Ray carries food under her arm and Emeril puts the kitchen towel under his arm or over his shoulder then uses it to clean plates. Sanitation while cooking apparently not important to these people.
I am also big on hand washing while cooking. There are a lot of things that the TV cooks do that really turn me off. Rachael Ray scratches her head while she cooks. Things like make me not want to eat the food they would prepare on the show. Some would lick off the spoon they are cooking with. Eeeww! I don't even let anyone but me touch anything in the kitchen while I am cooking.
the people on tv shows are professional chefs. I guarantee they wash their hands. it is often edited out though. as it really isn't necessary for the viewer. and on most cooking shows they do show them washing there hands sometimes. i,myself,am very anal about washing my hands while i cook.
I think a lot of things go on off camera that we don't see. Time is money on those shows and maybe some of the producers would rather fill the time with the cooking and less time on them standing at the sink washing their hands.
Well by not washing their hands their spreading bacteria to the food so i wouldn't eat it.
