Question: What happens if the shortening size is too small or too large when making biscuits?
would the texture change or would it be dry? What Happens?

By size, do you mean the size of the shortening bits once you have cut them into the flour? If they're too large, you're not going to get a nice flaky biscuit, rather pockets of over greasy areas. If too small, you won't get a nice flaky texture either, more like a Bisquick biscuit.
