Question: When making chicken stock, can you save the chicken meat that is left over?
I just made a chicken stock with a left over carcass and some chicken that was frozen. Can I save the chicken meat for a soup that I'm planning to make in 2 or 3 days?

Yes you can. You can marinate the leftover chicken meat before cooking another dish with it.

First homemade stock is highly perishable, freeze it.
Then , yes you can, but taste a bit of it first so that you know you haven't cooked all the flavor out. I always discard the vegetables and bones that Ive made stock from, but the meat I use. Also freeze.

ps In the future when you make stock hold off on adding the meat until the last 30-60 before the stock is done.
