Non spicy, no bean, NO SOGGY CHIPS nachos recipe?!
Answers:
1 bag of Doritos Nacho chips
1.5 lb hamburger
1 med white onion, diced
2 package taco seasoning mix
1 cup water
shredded cheese(s) of your choice
other nacho toppings such as onions, tomatoes, sour cream, guacamole, etc.
In skillet add onion and hamburger, cook the hamburger until done. Add both packets taco mix and 1 cup water, let simmer until most of the moisture is gone. In large microwavable bowl place a layer of chips, then meat and then cheese, repeat until all meat is gone. Heat in microwave for approx 2-3 minutes until cheese is melted. Serve and let each kid add their own personal toppings.
the best way to make nachos non-spicy and not get the chips soggy:
take a 16 ounce package of processed cheese (velveeta, etc)
add a can of diced tomatoes, or mild salsa
microwave into a liquid, stirring occasionally
then just dip the chips in the sauce and eat them
you can add anything else to this too... black olives, green onions/chives, and I even add browned ground beef occasionally

Brown some hamburger meat with a little taco seasoning. Fix small dishes of assorted toppings like lettuce, tomato, onion, sour cream, etc. Have some shredded mexican cheese available as well as both mild & medium salsa. Set up a mini "nacho bar" & let the kiddos make their own - that way everyone can make their nachos exactly how they like them!
Scatter your favorite tortilla chips in as-even-a-layer as possible on a rimmed sheet tray. Mound with lots of shredded cheese. Bake at 350 until the cheese has melted.
Remove from the oven and serve with salsa, guacamole, and sour cream on the side.
