Twice as much single cream.

double cream, heavy whipping cream, etc are the thickest of the marketed creams. You can use half n half or anything less thick than double cream, but the richness of your truffles won't be the same.

I always change plans when I forget to get the proper ingredients. Make something else that doesn't call for heavy cream.

double cream is what it is called in Europe, heavy whipping cream is what it is called in USA. It is the same item.

after quickly going thru my truffle recipes, I am not sure what you can use for a substitute. the ones I have all call for at least 35% heavy cream if you find the answer your looking for please let me know, thanks

I've used heavy cream to make a ganache which is truffle like, but I looked up double cream and couldn't find a substitute fore 60% fat cream...

I wonder if reducing heavy cream is the answer?
