Question: What are the best peppers for making chili?

i would use either a Serrano or chipotle for making childepeding on how hot you want to make it



If you are wanting to make your own chili powder


3 chipotle chilis, stemmed, seeded and sliced
3 ancho chiles, stemmed, seeded and sliced
3 cascabel chiles, stemmed, seeded and sliced
3 dried arbol chiles, stemmed, seeded and sliced
2 tablespoons whole cumin seeds
2 tablespoons garlic powder
1 tablespoon dried oregano
1 teaspoon smoked paprika
Directions
Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely.


Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the carafe. Store in an airtight container for up to 6 months.



Chipotle peppers are the best! I tried this one before during the holiday it was so good! I added my own special touches likes sliced sausages etc....

Turkey Chili with Chipotle Peppers, & Black & White Beans
Adapted from Bon Appétit Magazine

1 tbsp canola oil
2 medium onions, chopped
1 1/2 tsp dried oregano
1 1/2 tsp ground cumin
2 garlic cloves, chopped
2 lb. ground turkey meat
1/4 cup chili powder
2 bay leaves
1 tbsp unsweetened cocoa powder
1 1/2 tsp salt
1/2 tsp ground cinnamon
1 (28 oz.) can whole tomatoes (including juices)
2 tbsp tomato paste
2 chipotle peppers in adobo, chopped
2 tsp adobo sauce (from chipotle pepper can)
3 cups low-salt chicken broth
1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can small white beans, drained and rinsed
Sour cream
Fresh cilantro, chopped

Heat canola oil in a large, heavy pot set over medium heat. Add onions and sauté until tender and light brown, about 10 minutes. Add cumin and oregano. Stir for 30 seconds, then add garlic cloves. Stir for an additional 30 seconds. Increase heat to medium-high. Add ground turkey, breaking it up with a wooden spoon until it is cooked through. Add chili powder, bay leaves, cocoa powder, salt, and cinnamon. Add whole tomatoes, including juices. Break up the tomatoes with wooden spoon while cooking. If the tomatoes are breaking down easily, remove from the pot, chop, and then return to the mixture. Mix in tomato paste, chipotle peppers, adobo sauce, and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes, stirring occasionally. Remove and discard bay leaves.

Add black and white beans to the chili. Simmer for an additional 10 minutes.

Ladle chili into bowl, and serve with sour cream and chopped cilantro.

Serves 8.



Go chipotle. No to green peppers. I also put in a can of refried beans because I like the flavor and the thickening power, but not the beans themselves.



I don't like super-hot, so I cook sweet bell peppers and onions along with my meat.
It really infuses the flavor, yet it isn't so awful "tear" inducing hot.



I love adding Chipote peppers in Adobo sauce in mine. They add a great smoky flavor.
