What interesting lunch could I make with...?!


Question: What interesting lunch could I make with...?
Either a wholemeal flat-bread or a plain bagel, plus any of the following:
eggs, cheese, rocket/arugula, pinto beans, squash, tomato puree, onions/shallots, garlic, cream cheese, tuna, sweetcorn (not tuna and sweetcorn thanks!) and various condiments, herbs, spices etc.

Answers:

I would saute some minced onion or shallots in butter and scramble up two eggs and add to the onion/shallots once translucent and scramble the eggs with them and then cut a bagel in half and toast and add the scrambled egg mixture on top of each half. Then grate some nice Cheddar cheese on the top of the eggs and put the bagel with the eggs and grated cheddar under the broiler for a few minutes until the cheese is melted and bubbling and turning golden.

Sounds tasty...



Ok Flat-bread with Pinto beans and Cheese and cover with a fried egg,and some chives and salt and pepper. sounds good to me!



pinto beans, squash, chopped onions ( fry them first in soysauce and oil), in a broth, make soup out of them. then add sweetcorn at the end.
