Question: How to make spring rolls? please help?
i love them i could eat them all day, with the crisp outside, how do you make vegetable ones , 10 pointers

Answers:

Purchase some spring roll wrappers from an Asian grocer or these days most grocery stores carry them . Once you open them , keep covered with a damp towel in between wrapping . Unused portion can be wrapped ; place in ziploc bag and freeze for another time . Now on to creating . Use what you wish , but here is how I make spring rolls .
1/2 lb. raw prawns , cleaned & de - veined , chopped coarsely
1/4 small head red cabbage , sliced thin
1 head bok choy , sliced thin
sprouts , bean or alfalfa
chopped green or red onion
shredded carrot
chopped water chestnuts
Mix all your filling ingredients together in a lg. bowl . Remove one wrapper and place in front of you like a diamond . Place a small handful of filling on half closest to you away from the center .
Now take the point closest to you and lay over the filling . With fingers tuck and roll away from you to center , then fold in side points ; tuck and roll away from you to opposing point . Dip your finger in some water and rub on 25 cm. area of point , roll and this will seal together . Repeat until you have used up your filling.
Place oil in a deep frying pot if you do not have a fryer . Have it at least 50 - 75 cm. deep . Bring oil to a temperature of 350 F. ; I think that is around 180 C . Now place 2 or 3 at a time in hot oil and cook until brown , this will require you to roll them over to brown both sides .
Enjoy and be careful you are using hot oil !

Edit : I just noticed you wanted veggie rolls . Just omit the shrimp , sorry .
You can also add things like shredded daikon , jicama , spinach , escarole , fennel and kohlrabi . It's really up to you , just enjoy .



get rice paper ans soak it in water for a little bit
It becomes very workable
add your veggies in the middle and wrap it up

I like to deep fry them for about 1 min
