Question: What to make with Thin Mints Girl Scout Cookies?....?
I bought Girl Scout Cookies from my co-workers, and am about to have a Thin Mint avalanche pretty soon....

Any recipes, or ideas on how to bake with them?

buy chocolate pound cake, spread mint chocolate chip ice cream on top, freeze for aboutt an hour...top it off with ganache (melted chocolate and cream) and crush thin mints and place on top. you could also put the cookies in with the ince cream or layered in the cake if you like.

add thin mints (chopped) and choclate/mint bars..like aero..after eight...or andes. i like andes :) bake, and enjoy. drizzle with ganache (optional))

make brownies and add the same ingredients listed above. drizzzle with ganache...

? Use them as frosting: Cool cooked cake, ice as normal, then place the thin mints on top of the cake. Put it in the oven for about 10 mins until the cookies melt. OR you can add them crushed into the icing before you ice the cake

? Put them in brownie mix: Layer down brownie batter, then layer crushed thin mints, then the rest of the batter on top. OR you can add already crushed into batter.

? Chocolate Thin Mint Pizza:
Ingredients:
1 pkg. (18 oz.) refrigerated chocolate chunk cookie dough
1/2 pkg. (19 cookies) Girl Scout Thin Mints
1/2 cup white chocolate morsels
Vanilla ice cream, optional
Directions:
Press cookie dough evenly in the bottom of an ungreased 12-inch pizza pan or a 13×9x2-inch baking pan. (Dough will barely cover the pan.) Break Thin Mints into halves or thirds; press cookie pieces into dough, covering evenly. Bake at 350 degrees for 12 to 18 minutes or until golden brown. Place white chocolate morsels into a small self-closing bag. Microwave the bag of morsels on MEDIUM HIGH (70% power) for 40 to 50 seconds or until melted. Snip one corner (about 1/8 inch) off the bottom of the bag. Hold bag tightly at top and drizzle white chocolate stripes over top of pizza. When cool, cut pizza into 8 or 10 wedges. If desired, top each serving with a scoop of ice cream.

?Hamburger cookies: Put thin mint in between two nilla wafers. Red and yellow frosting makes for ketchup and mustard, green for relish or pickles. Add coconut to the frosting for coconut taste.

Those little gems were just made to crush and put on ice cream and in milk shakes. I have been making Rice Crispy treats with all sorts of fun add-ins. Although I haven't used Thin Mints, I think they would be delicious! Just crush them and add them to the mix before you press it into a container. Someone made some cookies at work for Christmas that had different things in the middle of them (with the cookie dough wrapped around whatever it was - rollo candies, hershey's kiss, piece of soft peppermint) maybe you could try that? Roll out your sugar cookie dough and cut in rounds larger than the thin mint. Put a thin mint on top of one cookie circle and top with another. Press the edges together. I mean, how bad could that be!?
