Answers:
Saute the onions in a few tablespoons of olive oil, until tender. Add thinly sliced garlic clove and keep stirring with the onions until the garlic is fragrant. Add thinly sliced red peppers ( one is enough) and over low heat cook until red pepper is tender. Add tomatoes ( whole);season with salt and pepper. Cook until the tomatoes 'burst' and flavours are released. ( I add a splash of wine at this point and continue to cook for 2 - 3 minutes). Add the chickpeas and mix with the rest of the ingredients. Keep warm.
Drain the pasta and add it into the pan with all of the other ingredients. Over low heat, keep stirring all the ingredients for a minute. Off the heat add the fresh mozzarella )cut into small cubes 1 cup is fine) and fresh basil ( julienned). Mix it all together. Serve right from this saute pan. Drizzle a few drops of olive oil before serving. ( I don't use milk...sorry)
Slice some planks of mozzarella and set aside
Put the garlic cloves and a few of the baby tomatoes in a baking dish. Drizzle with olive oil, season well with salt and cover with foil. Roast at 375 for 25 minutes. Remove from the oven and set aside
Meanwhile bring a large pot of water to the boil. Add a handful of salt and the bowtie pasta and give it a stir. Bring the water back to the boil and cook to the desired tenderness. Remove 1 cup of the cooking liquid before draining the pasta
Remove the garlic cloves from their papery skins and place in a food processor with the roasted tomatoes. Add the cooking liquid and puree everything together. Taste for salt and pepper.
Move the cooked pasta to the gratin you roasted the vegetables in. Drizzle lightly with olive oil and pour the roasted garlic-tomato sauce over top. Top with the planks of mozzarella and place back in the hot oven until the cheese has melted.
Heck yes. Make your bow tie pasta.
In a skillet, toss some silced red pepper, garlic and sliced onion in olive oil.
Mix your finished bowties with this skillet mixture...add more olive oil to taste and toss in halved tomatos, shredded or cubed mozzerella and basil leaves.
Oh my goodness, my favorite things to cook with.
Chop tomatoes~
Saute the onions, chickpeas, garlic in olive oil. Mix them into the pasta: add cheese and tomatoes.
