Question: I want to know of a good chili recipe? Any good recipes?
I hate the can tasting one from the store and some restaurants. I want help on a good chili recipe.

Answers:

chili can be quick and dirty or as elaborate as you know how to cook.
I will give you a quick and dirty version and you can take it from there, tasting as you go.
1 pound ground beef, browned and crumbled.
1 medium onion, chopped( if you don't like onion, use onion salt.)
1 green pepper chopped(if you don't like green pepper, skip it.)
1-2 stalks celery, chopped(if you don't like celery, skip it.)
1 teaspoon garlic(or more if you like garlic)
stir in veggies with the ground beef and brown a bit.
Add;
1 can chili beans or kidney beans or what ever kind of beans you happen to like.You can even mix and match, using a couple of cans of different beans.
1 can diced tomatoes(if you like spicy, use rotelle or any brand of diced tomato that already has hot peppers in them.
1 can tomato sauce.
enough water to make a semi thick chili. Some will evaporate as you simmer.
Season to taste with chili powder. Add slowly, tasting as you go so you can add more if you wish.
Salt and pepper to taste.
Simmer for about an hour to blend flavors.
Serve with shredded cheese and sour cream.

Then the variations:
Add a can of whole kernel corn if you like.
or
add another can or 2 of beans and more diced tomatoes if you love lots of beans or if you are making it for a crowd on a budget.
If you love the heat, add a few drops of hot sauce or use hot peppers instead of green peppers.

You are the master of chili and can do it however you like.
Change up the meat and use chicken.
Get a box of barley and make the chicken barley chili recipe that is on the box(its delicious)
Use venison if you are a hunter and have some in your freezer.



Can add 1 or 2 small cans of Ortega brand hot chopped green chilis to make this hotter
HALF TIME CHILI


2 tablespoons olive oil
1 1/2 cups chopped onions
8 large garlic cloves, chopped
3 pounds ground chuck
5 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 28-ounce can crushed tomatoes with added puree
1 14 1/2-ounce can low-salt chicken broth
1 12-ounce bottle beer
1 6-ounce can tomato paste
1 15- to 16-ounce can prepared chili beans
Preparation
Heat oil in heavy large Dutch oven over medium-high heat. Add onions and garlic. Sauté until onions are translucent, about 8 minutes. Add chuck and sauté until brown, breaking up meat with back of spoon, about 5 minutes. Add chili powder, cumin, basil, oregano and thyme. Stir 2 minutes. Mix in crushed tomatoes, chicken broth, beer and tomato paste. Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 1 hour 15 minutes. Mix in beans. Simmer 5 minutes. Season to taste with salt and pepper. (Can be prepared 3 days ahead. Refrigerate until cold, then cover.



I use a crock pot to make mine, but you can make it on the stove as well.

Also, we make 4 meat chili in my house (ground beef, chicken, turkey, and deer) but you can exempt anything you don't like...but I warn you you'll be missing out if you do.

1-2 cans of tomato paste
1 can Rotel tomato & green chilies
Add meat ( we don't measure this, we just add what feels right)
mixed
1 mini can of mushrooms (or 1/2 cup of fresh if you have them)
1 can of chili beans
salt, pepper, and paprika to taste

Let it cook in a crock pot until meat is cooked...or on stove until meat is cooked

Soak 1 lb. of any beans you prefer-I like pinto beans-in cold water to cover, overnight .Throw out soaking water and cover beans again with cold water .Cook beans. Simmer on low heat for 2 hours,stirring every 1/2 hour, uncovered Do not add salt or beans will be hard.Taste test to see if the beans are soft and done .Cook longer or remove from heat.Set aside. Use the best ground beef you can afford 2 lbs . Heat on medium in fry pan till browned and crumbled .Drain off any grease. Add 1 Tablespoon garlic chopped and salt to taste (about 1 Tablespoon) ,1-2 Tablespoons chile powder (depends how HOT you like your chili), 1 Tablespoon ground cumin and 1 large diced white onion to the cooked ground beef.Heat for 1-2 minutes,stirring constantly.Add 2-3 large diced tomatoes to beef mixture.Next add all of the chili mixture to the cooked beans,heat on low simmer, uncovered, for 1 hour or till you are ready to eat.I always make a big pan of corn bread to eat with chili.Enjoy ;)



Blech canned chilie!

Here is how I make mine...it is super yummy!

What you need:

1 LB ground beef or turkey
1 Green Pepper
1 Red pepper
1 Ear of corn (or you can buy the tiny can if you prefer)
1 Large Yellow onion
Fresh Garlic (about 5 or 6 cloves) (really it makes a huge difference between this and garlic powder)
2 Cans of petite diced tomatoes (not the monter cans, the typical size)
1 Can of tomato sauce (plain)
1 Can of whatever type of beans you like, I usually do half a can of black beans and half pinto beans
1 tablespoon of honey
1 cup of red wine
2 tablespoons (add more if you like, but start with that) of Chile Powder
1 tablespoon (add more if you like) Cumin
1 teaspoon Paprika
Some red pepper flakes (more or less to taste, start out small and add more as it cooks if you like it hot
1 teaspoon onion powder

To Make:

-First brown your turkey or beef. I usually buy the super lean, so I don't bother draining the fat. But if you want lower fat chile you can drain the fat.

Chop your onion and peppers to whatever size you prefer. I like chunky chile so I cut them about 1/3 inch wide and one inch long.

-Throw a little olive oil (like half a tablespoon) in a pan and then saute the peppers and onion until they start to get soft

-while that is happening mince/slice your garlic, throw about 1/3 of what you mince/slice in with the peppers to cook.

-after your peppers soften up pour half the can of sauce, one can of diced tomatos & the meat in with the peppers/onions/garlic & mix it up well

-heat is at a simmer

-next add your spices, keep tasting a lot you prob want to add some salt & some black pepper

-keep the pot at a simmer, add the corn (which you have removed from the ear) and the beans (make sure to drain beans!) Add more garlic

-now take a look, is there not enough sauce? Add some more sauce & diced tomatoes until the chile looks like you think it should

-next add the wine and the honey & mix it all up good

-let it simmer partially covered for about 45 min stirring occasionally

-taste and add any more of the above spices as well as a few pinches of flour to thicken it up.

I like to let it simmer for quite a while, but really you just have to do it until the wine reduces. Use your best judgment when adding more spices/sauce.
