Get a mixed salad with arugula and mix up a salad dressing using 3 parts of virgin olive oil to 1 part rice vinegar or balsamic if you like it to be a stronger flavor , finely chopped garlic, a pinch of sugar, oregano or basil or both depending on your taste, and Dijon mustard. Shake to mix all the ingredients well. Prepare some prosciutto by brushing with oil on both sides and broiling until a little crispy to put around the salad. Finally, shave pieces of Parmesan cheese to put on top. Don't use grated cheese. If you want to go heavier, add some steamed asparagus tips. If you want to go lighter, eliminate the prosciutto and cut up some kiwi fruit to add. By the way, pour the dressing over after you've arranged the salad, etc. on the plates.

Nothing beats a fresh green salad! A green veggie dish that includes green beans or spinach or zucchini etc. Slice some french bread, brush a little Italian dressing, add some basil and a slice of mozzerela then bake until cheese melts at 350 degrees.



You could try grilles asparagus with garlic or a nice Italian salad. You can also grill squash or zucchini with red peppers for a pop of color on the plate.
