I have a recipe which calls for feta cheese to be used in a stuffing for chicken, what other cheese can I use?!

Feta is usually used because of it's distinct flavor. I have used whatever cheeses I have on hand, cheddar, parmesan, cream cheese, etc. If you're having to use a bland cheese, just add more herbs & spices to liven the flavor. Rosemary, sage, thyme, oregano, chili powder, cumin, turmeric, curry powder, etc. All these herbs & spices will impart a great flavor to your cheese & chicken.

Any soft, mild cheese is good, as long as plenty of herbs are used to enhance flavour.

I like to use boursin cheese or cream cheese mixed with herbs. you can also use riccotta
