how long and what temp do you think i should cook chicken and..?!


Question: How long and what temp do you think i should cook chicken and..?
Tonight for dinner i was thinking of roast chicken breast with sweet potatoes and carrots.
Never really roasted chicken before i always just to it on the stove.
So i took the chicken breast out yesterday and let them thaw in the fridge with olive oil and seasonings on them the way i always do, and i was thinking i could just peel and cut up the sweet potatoes and put them in the bottom of a Pyrex dish with the baby carrots and maybe a little more olive oil/salt then put the chicken on top of them. Will this work? should i cover it with foil? how long would it take to cook? I also have an onion and come celery, should i put them in or just the carrots and sweet potato?

Sounds great - I roast vegetables and chicken all the time. I like to brown the chicken (skin side only) in a frying pan first. Cut the vegetables up in similar size pieces. Toss like crazy with olive oil, salt, pepper and put in oven pan. Lay the chicken on top, skin side up. 350 degrees - test at 30 around minutes - depends on size of chicken and size of your veggie pieces, but that's a place to start. OR: oven temperature at 400 degrees, put in vegetables for about 20 minutes - they'll get carmelized maybe a little burnt-looking around the edges (mmmm.....good...) but that's fine - then lay chicken on top (skin side up) for finishing off - sure, use the onion and celery, and if you have anything green ,broccoli, green pepper, bok choy, etc., throw that in, too. Dont cover with foil - you don't want it to steam - enjoy!
