Question: Homemade tomato sauce bitter?
I made my first homemade tomato sauce from scratch today. I didn't have enough sauce for some previously frozen I had, and we were out of canned tomatoes/sauce, so I just used three romas we had to stretch it. I peeled the tomatoes and cooked them as advised on several sites online. I used olive oil, and made sure the garlic I used DID NOT get too brown (because I read it would turn sauce bitter)...I added sea salt, pepper, basil, a bay leaf, and some oregano.

After cooking it all for ten minutes as instructed, it was fairly bitter. I tried adding a bit of sugar but still, very bitter. Can any experienced cooks give me an idea on how to make homemade marinara without that bitter taste? Thanks!

Answers:

Takes more than 10 minutes sweetie. Forget the carrot, honey, sugar, all that. Add 1/4 cup dry red wine, like Chianti, and simmer for at least two hours. And garlic should not get brown AT ALL when making a red sauce. It will bitter up quickly.

I'm Italian and have been making red sauce for over 40 years. I also own a gourmet foods company.



Take the seeds out of the tomatoes before cooking. Carmelize the onions. Add grated carrot for additional natural sweetness.



Homemade sauce takes a lot longer to come together then 10 minutes, Add 1/4 cup of honey( if you have it) or sugar and let simmer, covered on low heat for at least 1 hour.This should improve your sauce ;)



try grape jelly and let it simmer for a bit.
