Question: 8 large Eggs. 4 people. What can I make to feed us for breakfast??!?
Living in Oklahoma during this blizzard, allll the eggs are wiped out in the 3 walmarts and 2 stores i've checked.

I have 8 eggs.

What can I make to feed 4 of us?

I have bacon...but is there anything I can make with the eggs that would make it a larger serving??

I would scrabble all of them together and divide into four servings. Toast and jelly on the side. OR put the scrambled eggs on buttered toast.



you have bread? you could make alot of french toast with 8 eggs, even if you just wanted to make eggs, 2 each is good. 2 egg ommlettes would be a good idea, if you scramble them all together people tend to take too much.

Some crazy weather we been having here lately huh?
I try to keep a box of just add water pancake mix somewhere in the back of the pantry for the uh-oh how am i gonna feed all these people mornings lol



Lots of egg casseroles are available (see allrecipes.com). I sometimes enjoy leftover rice fried in a skillet, then make a nest and break the eggs in it. Fry the eggs for awhile, then scramble. I also recently got a recipe for Bombay eggs - 1/2 cup potato chips, 1/4 cup cilantro and 1/8 cup minced onions per egg.



If you have any vegetables like peppers, onions, and especially potatoes, chop them up and saute in a pan. Crack two eggs in and scramble so the veggies are coated in eggs. Serve with bacon. Delish!

Do you have and milk? Adding milk to eggs helps to fluff they up ( water is said to work to but never tried that myself). Maybe some cheese mixed in or on to help make it more filling.



Give everyone some bacon and one sunny side up egg for each person then, for nutrition, a hard boiled egg :DDD

It would help if you had coffee or even fruit!

I have the perfect answer for you, provided you have some bread. This easy simple recipe will triple the serving size, from what you would expect from a fried or scrambled egg.

It's called eggs in a nest.

Preheat oven to 350. Use foil to line a sheet pan (these will stick somewhat to the pan), and grease the surface with cooking spray. Lay out 8 slices of bread and cut a 2" hole thru each one with a small glass, or the top to the cooking spray, or something like that. Put your bread slices (with hole cut out in them) on the sheet.

Carefully crack each egg and separate the yolks and the whites (keeping each yolk in its half egg shell), then whip up the whites into a meringue (with a little bit of cream of tartar) until stiff peaks form. Then scoop the whites into a round pile into the hole cut in the bread, spooning it out equally. If your meringue is nice and firm, your mounds will be quite large! They'll cover most of the bread. Make a dent with a spoon, add a quarter of a pat of butter, then carefully put the intact yolk back into that dent (try not to break the yolk, but it's ok if it does, it will just be fried hard instead). Put a teaspoon of cream or half n half on top (if you have it). Whole milk will work too. Salt and pepper on top.

Bake them about 8 minutes at 350. Till the whites start to turn golden on the surface. Not too long, or the yolks will be hard. Remove from pan with a spatula. It's a great breakfast to impress someone! Even if you are not starving and huddled up from a blizzard! Plus, the whipping of the egg whites makes it much larger and more satisfying.

If you want, on top of the yolk you could add: Crumbled bacon maybe. Shredded cheese. Both! Maybe some chopped tomatoes, and chives.

Toast the circles of bread that you'd cut out earlier, in the oven, and serve with jelly. Or, save one of the eggs, mix with milk and Cinnamon and make french toast circles with them as a side.

Mmmm... I'm hungry.
