Question: All purpose flour closer to bread or cake flour?
Is all purpose flour closer to bread flour or cake flour?
I am between two cookie recipes, one calls for bread flour the other calls for cake flour.
I only have all purpose flour, and I would like to know which is the all purpose closer to?

All purpose can substitute for cake flour or the other way around, cake flour is lighter so use 2 tablespoons more per cup. 2 tablespoons less of all purpose to substitute for cake flour. And sift it if possible. Bread flour would make a very tough cookie.



Cake flour has less protein to make a finer crumb, All purpose flour is fine for making cookies, depending on the type you are making

For each cup of all purpose flour, remove 2 tablespoons and add 2 tablespoons of cornstarch to equal 1 cup of cake flour. I recommend sifting the flour a few times as well.
