Ok, agreed...this looks terribly complicated, but it's really not. I absolutely guarantee you this will knock his socks off! If it's just the two of you, cut everything in half. The hard part is finding Mango that is ripe. After I made this recipe I found Mango "pieces" in the veggie department. Go that direction if you can.
I gotta tell ya...this is one great dinner!
Bourbon Raspberry Rub Steak with Raspberry Mango Salsa
YIELD: 4 SERVINGS
? cup bourbon (I used Jim Beam) {…no sampling until your done! <smilie face>}.
6 oz. raspberries
2 tsps. sugar
2? tsps. dry mustard
1 Tbsp. crushed mixed peppercorns (I like the grinders available in the spices section)
2 tsps. garlic powder
2 tsps. salt
1 tsp. smoky paprika (couldn’t find locally…used regular)(…found later at "Whole Foods")
1 tsp. cayenne pepper (didn’t want it that spicy so used ? tsp of chili powder)
4 bone-in rib-eye steaks, 8 oz. each
Raspberry Mango Salsa:
6 oz. raspberries
1 mango, peeled and diced (Hard to find a ripe one…had to let it set for a few days)
3 scallions, trimmed and sliced thin
2 Tbsp. orange juice
1 Tbsp. corn oil
1 Tbsp. slivered mint (I’ve fresh mint growing next to my patio so diced some leaves)
? tsp. salt
? tsp. pepper
1. Combine bourbon, raspberries and sugar in a small saucepan. Using a fork, mash raspberries until blended. Bring to a boil over medium-high heat. Reduce heat and simmer for 5 minutes, stirring frequently. Strain to remove seeds.
2. Remove the sauce to a small bowl and stir in dry mustard, peppercorns, garlic powder, salt, paprika and cayenne pepper (or chili powder) until blended.
3. Brush both sides of steaks with bourbon raspberry rub mixture. Cover and refrigerate for 2 hours or overnight. (Actually I let mine marinate for a 2 days while waiting for mango to ripen)
4. For the raspberry mango salsa: In a small bowl, stir together all ingredients until blended.
5. Per order: Grill steak 6" from the heat source for 10 minutes (turning once) or until a meat thermometer reads 140°F for medium-rare. Serve ? cup salsa over steak. (I Broiled in oven for just a few minutes to M-Rare)

Shrimp Scampi
4 tsp olive oil
1 1/4 pounds med shrimp, peeled (tails left on) and deveined
6-8 garlic cloves, minced
1/2 cup low sodium chicken broth
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 cup + 1 T minced parsley
1/4 tsp salt
1/4 tsp freshly ground pepper
4 lemon slices
In a large nonstick skillet, heat the oil. Saute the shrimp until just pink, 2-3 min. Add the garlic and cook stirring constantly, about 30 seconds. With a slotted spoon transfer the shrimp to a platter, keep hot.
In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; bring to a boil. Boil, uncovered, until the sauce is reduced by half; spoon over the shrimp. Serve garnished with the lemon slices and sprinkled with the remaining tablespoon of parsley.
Roasted chicken with oven roasted potatoes (or mashed), steamed summer squash and zucchini. And something chocolate for dessert!
My recipes are (it's best if you can cook the chicken and potatoes at the same time)
Chicken:
1 whole chicken, rinsed and patted dry (I usually get a 7lb, but that's a lot)
salt
olive oil
rosemary
garlic powder
Preheat the oven to 375 degrees. Put your chicken in a roasting pan with the breast side up. Rub a little olive oil all over it. Then sprinkle with salt, rosemary and garlic powder.
Bake for 2 hours. Then put a huge piece of foil right over the chicken, and lightly press it around the pan. Let it sit like that for 15-20 minutes. DO NOT cut the chicken until you have let it rest. Yum.
Potatoes:
1-2 whole white potatoes, washed, with peel on
2 tbsps olive oil
1 tbsp water
salt
garlic powder
paprika
Preheat the oven to 375. Dice the potatoes. Place in a square 8 or 9 inch baking pan. Toss with the water and olive oil. Then sprinkle with salt, garlic powder and paprika. Bake for 1 1/2 - 2 hours or until golden brown and crisp.
Yesterday I made a delicous chicken sweet and sour . I made up the recipe I bought 3 chicken thighs or you can use breast sliced it and stir fried it when partly cooked I put in a small chopped onion a red capsicum sliced ,seeds removed I boiled a sliced carrot and a handful of green beans sliced for a few minutes and drained them then threw them in the pan Then I got half a cup of sweet and sour sauce . added that then some sliced pineapple about half a cup and about quarter to half a cup of the pineapple juice and cooked through for a couple of minutes.
