I need a good but simple egg recipe for breakfast mainly.

Try some One-Eyed Jacks.

Using a biscuit cutter, cut cut through two slices of bread. Butter both sides of the bread before removing the bread rounds.

Spray a skillet with non-stick spray and heat over medium heat.

Place the buttered bread in the skillet, break an egg into each hole, fry until the egg white is set, then turn cook for a short while, depending on how well done you like your fried eggs. Fry and turn the bread rounds at the same time you fry the bread and eggs.

My favorite egg recipe is quiche, and you can eat it any time of day, warm or cold.

Quiche

I unbaked deep dish pie shell
4 large eggs
1 1/2 cups milk or half and half
4-8 ounces grated cheese
2 cups of filling (chopped ham, crumbled bacon, broccoli florets- any kind of meat or vegetable you like really)

I prick the pie shell with a fork a couple of times, place the cheese and filling or fillings on the bottom. Mix the eggs and half and half or milk together in a bowl, pour over the top. Bake at 400 degrees until set, usually 35-40 minutes. Sometimes I add a little Parmesan cheese and chopped green onions to it before pouring the egg and half and half over the top.



Breakfast Pizza - buy the ready to bake pizza dough in a tin. Place on the bottom of the cookie sheet. Scramble some eggs with any of the following added in - Chives, Bacon, Sausage, Onions, Green peppers, mushrooms, tomatoes, spinach, or anything else you like with your eggs.

**Make sure not to cook the eggs until too dry because you will put in the oven to bake the crust. EASY and very unique everyone always LOVES when I make this for the family.

Into a frying pan put some bacon and fry it a bit.
Push the bacon to the side and crack a few eggs in there.
Toast some toast..
When the bacon and eggs are cooked put the toast on a plate and put the bacon and eggs on it.
Add some tomato, lettuce and maybe some onion for a toasted bacon and egg sandwich.
You might like a bit of mayonnaise as a relish, but it is not really needed..



Take a thick slice of bread and cut a medium sized hole in the middle. Butter one side and place the unbuttered side on a skillet. Break and egg into the hole you've made and let the egg cook. At this point, you can sprinkle some salt and pepper on the bread for taste. Once the egg is almost done, flip the bread over and let it toast to your liking.
