Recipes for Spaghetti Squash?!


Question: Recipes for Spaghetti Squash?
Does anyone know of a delicious way to eat or a good recipe for spaghetti squash?
I have already found many recipes using it to make a vegetarian pasta dish, but what i want is something a bit different, like a soup, a pie, a stir fry or a fritter... something exotic, tasty and a little bit fancy.
Is it possible to actually make this vege taste good?!

Spaghetti squash dip
Ingredients
1 spaghetti squash, halved and seeded
1/4 cup butter
1/2 cup mayonnaise
1 cup grated Parmesan cheese
2 cups grated Monterey Jack cheese
3 tablespoons grated Parmesan cheese for topping

Directions
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
2.Place the spaghetti squash cut side down on a lightly greased baking sheet. Place in preheated oven, and bake until soft when a fork is inserted., 30 to 40 minutes.
3.Scoop out the cooked squash, and place in a mixing bowl. Add butter to the squash and stir until butter melts. Stir the mayonnaise, 1 cup Parmesan cheese, and Monterey Jack cheese into the squash mixture until well blended. Pour into the prepared baking dish. Sprinkle with 3 tablespoons Parmesan cheese.
4.Bake in preheated oven until cheese melts, about 20 minutes.

Ingredients:

1 Squash
1 large spaghetti squash (2 1/2 to 3 pounds), halved and seeded
0.5 cup Water
Garlic and Oil
0.5 cup olive oil
6 cloves Garlic chopped
0.25 teaspoon red-pepper flakes
0.33 cup water; or white wine
0.75 teaspoon Salt
0.25 teaspoon black pepper
0.33 cup Parmesan cheese grated

Preparation

1. Squash: Heat oven to 350. Place squash halves, cut side down, in small roasting pan. Add water. Cover pan with foil.

2. Bake in 350 oven 50 to 60 minutes or until squash is fork-tender.

3. Garlic and Oil: In small saucepan, heat oil over medium heat. Add garlic and pepper flakes; cook 1 minute or until garlic just starts to color; do not let garlic burn. Add water (or wine), salt and pepper. Bring to a boil for about 2 minutes.

4. Using fork, shred squash into strands. Place strands in large bowl. Add garlic mixture; toss. Sprinkle with Parmesan cheese.

Makes: 6 servings at around $1.00 each. (depends on price of squash)

Assumes most other ingredients are on hand in pantry.

Prep: 10 minutes. Bake: squash at 350 for 1 hour. Cook: 2 minutes.
