Question: How about using chat masala in noodles ?
I'm not a expert cook.

I have been searching a good masala for best tasting noodles but i can't find. i have tried lot of brands but they all tasted bad. my noodles are no where near to 1 we can find on streets. i put everything they use even i can't get the taste like street noodles.

finally i found chat masala but worried to try it. is it good to use chat masala in noodles ?

When I worked in Singapore we went to the Hawker stalls at night and I had egg and rice noodles laced with Chat Masala and Tamarind sauce, Chat Masala is alot like when you make Garam Masala, you have to set the ingredients, street vendors would have there one blend of spices, seeds, fired and raw bit plus herbs in there blends, it hard to breakdown a street vendors blend unless you an get a bit extra and take it home to look at it. I buy a pre-made one here in Canada from the Desi company.



hi,try ths take ready to cook knor or maggi chinese chilli packet. follow the instructions to make gravy. then if u want non veg add boiled chiken n little carrot capci n beans.
boil ur noodles n pour this gravy on it mix well. while boiling add a dash of oil to the water so that it won,t stick. fr some noodles u can even pour cold water on it.let all water dry n then mix to the gravy.

the street guys noodles use their own home made masala. they buy raw masala and make it by frying drying and so on so it taste different and tasty in street noodles.

Try this dish out its better than chat masala in noodles. Its called Sizzler Noodles

Sizzler is another fusion cuisine that is creating rage. Nobody knows the origin of this dish yet its popularity is completely undeniable. It is extremely versatile and can be easily modified to any taste. Hence, it is not a rarity to find sizzlers with Indian, Chinese or even oriental topping. What you need to do is be creative and create your sizzling dish.

Sizzlers have wide takers ranging from people who are health conscious to real foodies without a care of calories. Do try this recipe which is hard core vegetarian and has the hit combination of vegetables and pasta drowned in a tangy tomato sauce.

Ingredients to serve 4:

1/2 cup Broccoli florets
1/2 cup sliced baby Corn
1/2 cup boiled Green peas
1/2 cup Red capsicum cubes
1/2 cup Yellow capsicum cubes
1/2 cup boiled Green pasta
1/2 boiled White pasta
Salt and freshly ground Pepper to taste

For the Tomato gravy:

4 large red, ripe Tomatoes cut into big pieces
2-3 teaspoons Sugar
1/2 teaspoon Oregano or 1 teaspoon chopped fresh Basil leaves
A pinch of Carom seeds (Ajwain)
1/4 teaspoon Chilli powder
2 tablespoon fresh Cream
Salt to taste
Butter


Method:

Cook the tomatoes in a pan on a slow flame without adding any water. Blend to a smooth puree and strain.

Add the sugar, oregano, carom seeds, chilli powder and salt. Simmer for 5-7 minutes on a slow flame.

Add the cream and mix well. Keep aside.

Blanch the broccoli and baby corn in salted boiling water for a few minutes. Drain and keep aside.

Heat a little butter in a pan and saute the broccoli, red and yellow capsicum for a few minutes. Add the salt and pepper. Keep aside.

When you want to serve, heat a sizzler plate on the gas till red-hot and brush it with a little butter.

Arrange the vegetables and pasta. Heat the plate for half a minute more.

Pour the tomato gravy over the pasta and put very small blobs of butter over the plate to get the sizzling effect. Serve immediately.
