For inspiration on edible structures and creations, check out gingerbread-house-heaven.com. It has tons of photos and many are not made of gingerbread but cookies, candies, fondant, gum paste, chocolate,... And you can share the end result of your oreo creation there too.

Try and make holes in them and see if you can make a necklace or something using strawberry laces.

An oreo factory - be creative with the sign. Like see if you can paste the white cream out and sprinkle crumbs to make the 'oreo' letters.
Castle is good. How about a whole village?! Get some empty cardboard food containers (cereal boxes, milk cartons, etc), set them up and decorate away! Just like gingerbread houses at the holidays.
