Baking a Birthday cake...PLEASE HELP!!!?!
Okay, so major problem. Im trying to make a cake for our exchange student while my parents are outta town and he is asleep. I made the rookie mistake of not checking to make sure i had the ingredients before i started so, I got halfway through making th cake and realized i didnt have a fourth egg. i have three...not four. Oh and to add to it, we are completely snowed in....
Is there anyway i can still make the cake? or is there somethign i can do to substitute for that egg?
Oh, and cant start over.. we have no more cocoa. So if there is a way to start over with 3 eggs and somthing other than cocoa(but it needs to be a chocolate cake) PLEASE tell me!
PLEASE PLEASE HELP. Thanks!
Answers:
Eggs provide two things to a cake - one it is glutenous meaning it helps bind things together as well as it has a liquid quality. From wiki answers here is what the experts say:
"Some cake recipes specifically call for mayonnaise, but generally it's not a good substitute for eggs in baking. Eggs are a unique ingredient -- an emulsion of liquid, protein and fat in a delicate balance. Virtually nothing acts the same way in cooking, as eggs do."
However, there is a solution. I have used applesauce in place of eggs before and it works. It is not the exact same consistency but it will do the job for you and 99% of the people would never know!
Use 1/4 cup of applesauce in place of 1 egg.

Oh and do NOT use mayo it has a different quality.
What a sweet thing to do! I hope it works out for you.
Mom of 3 and baking for 30 years.
to replace the cocoa, you can melt any unsweetened chocolate and stir it into your batter. check the cupboards for baking chocolate. One square = 3 T cocoa powder + 1 T shortening. You could even melt down chocolate candy bars or kisses, but you have to reduce the sugar in your layers.
1 egg
= half a ripe banana
= 2 tbsp cornstarch dissolved in 1 tbsp cold water
= 1/4 cup soft tofu pureed

Hope this helps
sure. you can substitute 2 tablespoons of mayonaise. use regular mayo not salad dressing like miracle whip.
Just skip the 4th egg it will not matter that much. Add 2-3 tablespoons more liquid instead.
