Question: What are some good Australian Recipes?
In school we're doing a cultural heritage project and I am doing Australia. For part of it we are doing this food thing. Are there any good recipes i could do?

Kangaroo Steaks with Marinated Mandarins Australian Potpourri
Ingredients:
1 kg kangaroo fillet (you can substitute beef fillet)

Marinade:
1 can mandarin segments
1/4 cup Grand Marnier
2-3 tablespoons spicy plum sauce
2 oranges, juiced or 2 tablespoons orange juice concentrate
2/3 cup kikkoman teriyaki sauce
fresh ground black pepper
1 lemon, juiced
1 tablespoon dark brown sugar
1 tablespoon olive oil
1 lime, juiced

Directions:
Marinate well-drained and patted dry mandarin segments in Grand Marnier for as long as possible (2-3 days would be good but 4 hours minimum), turning regularly.
Drain liquid off mandarins and add liquid to all other marinade ingredients.
Combine well and reduce by 50% if using fresh orange juice, otherwise leave as is.
Cut kangaroo (or beef) fillets into 20-25mm thick diagonal slices (cut across the grain).
Pat sliced kangaroo steaks dry and add half the marinade to a shallow dish.
Add steaks & pour over remaining marinade and refrigerate turning occasionally.
Remove steaks from refrigerator 2 hours before cooking and turn meat.
Grill steaks about 10 minutes, until medium cooked. DO NOT OVERCOOK AND TOUGHEN.
Meanwhile, reduce leftover marinade in a pan on a low heat, and when reduced add marinated mandarin segments and toss lightly.
Heat through and serve over steaks with boiled rice and a side salad of 3 or 4 different lettuces.
Make a dressing of balsamic vinegar, lemon juice and concentrated orange juice, seasoned with freshly crushed pepper and a little Grand Marnier.
Serve with a Gutsy Aussie Red.Makes 4 large servings

Bloomin' Onion Recipe Australian Vegetable
Ingredients:
1 Sweet onion
1 Eggs
1 tb Milk
2 tb Flour
1 cup Cracker crumbs, crushed

Directions:
Select a well-rounded onion. Peel outer skin but leave root intact, cutting off any hanging roots. With ordinary paring knife, core out top third of center. Angle knife for best results. Divide onion into four sections, by making 2 cuts crosswise, beginning at the top and cutting toward the root, stopping about 1/2-inch away. Cut each section twice again. Place onion in bowl of enough boiling water to cover it and leave for 5 minutes. The sections, or "petals," will begin to open.

Remove onion from hot water and immerse in ice water, which will further the opening. Drain well by turning upside down on a paper towel.

Put flour into paper bag (season with any seasonings you'd like--Cajun, cayenne, plain ol' s&p, etc), add onion and shake gently to coat with flour. Beat egg and milk; roll floured onion in egg. Put cracker crumbs in paper bag, add onion, and shake gently to coat. Refrigerate 1 hour before deep frying to set the coating.

Heat oil to 375-380 degrees. If oil isn't hot enough, it will be greasy and the batter may not stick. If oil is too hot, outside will burn before inside is cooked. Place onion petal-side DOWN in HOT oil or use a wire basket. Cook until golden brown, 3-5 minutes.

Cooked onion can be kept for a time in a warm oven. Serve with sauce made of Russian dressing and horseradish.

Outback steakhouse cyclone pasta Recipe Australian Chicken
Ingredients:
Fett.sauce
1 quart heavy whipping cream
1 1/2 tbs salt
1 1/2 tbs course grind black pepper
3/4 tbs granulated garlic
1/2 tsp red pepper flakes
1/4 tsp cayenne pepper
1/2 tbs maggi seasioning
1 cup fresh grated parm. cheese
mix all together and refrigerate till needed.

1 lbs penne pasta cooked,drained and cooled and oiled with 2tbs of quality olive oil.(dont over cook!) aldante is best!

2 grilled and seasoned split chicken breasts
(season chicken with salt,pepper,cayenne and paprika)

Directions:
you will need to brush the shitakes with olive oil and grill them on both sides also, then when cooled slice into strips, add what you want to the pasta.

chop fresh basil and peel & chop garlic clove into med fine pieces, about two basil leaves and 2tsp garlic

next cut ham into small cubes,add to taste

hydrate sun dried tomatoes in very warm water untill the are plyable, again add what is needed.

add 1 1/2 cups of fett sauce to large skillet on med high heat.

then add 10 oz. of the cooked penne pasta to the skillet.

add all other ingredients to the skillet and heat until the fett sauce thickens. keep the food moving to prevent scorching. You can add more or less fett sauce to suit you own tastes, same goes for the other spices...
