Answers:

After cleaning the animal well place carcass in a foil lined baking pan and cover with BBQ sauce. Cover tightly and bake in a 350* oven until tender and the meat falls from the bone. Time will depend on its size. Check after a hour and go from there.



Cooks about the same as pork assuming you have a fairly young one. We never ate the older ones 'cause they were tough. Those were boiled in the butcher pot & made into sausage. Been a long long time but I don't remember eating raccoon or opossum unless it was a last resort.
