Cassonade is sugar but is it the French equivalent of demarara sugar?

Yes and No. Cassonade and Demerara are both primarily unrefined cane sugar (rather than sugar beets).They both fall into the brown sugar category. However, depending on what you want to use them for you may want to go to this site: http://www.davidlebovitz.com/2009/11/fre…
