Macaroni and Cheese as a main dish?!
I am having a friends over for dinner next week, I've cooked for them lots of times, I have recently fallen in love with a really creamy cheesy home made macaroni and cheese recipe I thought I'd do this time. It is very rich and I want it as the main dish, but what side dish would go? I normally just serve it for my family with steamed vegetables, but that doesn't seem special enough for company.

I would grill up some good italian sausage and slice it and mix it into the mac and cheese. More substantial that way.
I think steamed broccoli or a salad would go well with it. A very easy thing to do is chicken tenders. I dip them in stirred eggs, coat them in crushed french fried onions or seasoned bread crumbs, and cook them at 350 degrees for 20 minutes or so. You can have blue cheese, ranch, or thousand island dressing for dipping sauces. While the best mac and cheese in the world is good, adding meat and veggies to the meal can round it out. Frozen garlic bread can be heated for 5 minutes in the oven too- my boyfriend thinks it's heaven.

I see that you are a food enthusiast and love to cook different foods. I was not very good at cooking until I came across a cooking recipe book that was so simple for me to follow but more importantly gave me tremendous results.
There are just these simple easy to follow recipes which I found simple. I learned a blot but the best thing is the excellent result.

Usually when my family has macaroni and cheese as a main dish, we eat broccoli and either a salad or a chicken tender. There are kids in the family which is probably why we eat chicken with it but it's still really good.
An interesting variation would be to set out bowls of broccoli, bacon bits, salsa and crackers and let them make their own creative servings
yes i love mac and cheese for a main have some sweet and crunchy salad with a sweet white wine.
I agree..broccoli with a buttery sauce and maybe a nice hamburger steak with sauteed onions over top..Yumm Im hungry now
