Usually that means air has gotten to it. If you've only had it a day or two or the date on the label is good, it should be ok. Just like with eggs, if it's bad, YOU'LL KNOW IT!! You can't deny the smell.

How old? how cold? What does it smell like? The surface of the ground beef will oxidize, turning it brown and changing the smell/flavor. Sometimes it is harmless and when you tear into the beef, it is still red inside and you can see that the brown is just on the surface. If it bothers you, skim that part off and cook it up for the birds or your dog. Other times, the meat is getting old and going off. You will know the smell. Good Luck



IT is because the blood has drained out of it, if it smells ok then I'd go ahead and cook it.
