Recipe for nacho cheese dip that, if left in crockpot for a few hours, won't turn hard. NEED TO STAY THIN.?!

The problem is not with the recipe, it is simply overcooking the product. Any recipe is going to harden if left for hours. Simply monitor the crock pot and add a bit of milk as it thickens. Keep on low or maybe turn off for a while if the low setting is still to hot. Also using quality ingredients make a better dip than those processed from a can or box cheese. White american cheese, jalapenos, and cream make a wonderful dip.
