Question: What do you think of my recipe for a ''light'' vegetable soup?
my mom is sick so i want to make her a really nice dinner and every one seems to improvise when it comes to vegetable soup so im not sure how it will turn out
ok so
1-let a chicken boil until its fully cooked
2-take the chicken and get rid of bones and cut it in to small peaces
3-put the chicken back to the same put of broth that it was cooked in and add two cups of carrot and one cup of salary stick
4-add some salt and pepper
5-serve when the vegetables are soft
what do you guys think ?
and what kind of other vegetables do you think i can add to my vegetable soup?
do you think it will taste good????? what changes should i make i really want mom to enjoy it

Thats chicken veggie soup, but thats okay...while the chicken is boiling, add some bay leaves (2) and perhaps some sage ( just to taste ) Salt and pepper
Remember to skim the scum from the top and remove the skin as well as the bones from the chicken.
I think a cup of celery is a bit much...check out this recipe, I leave out the apple

I'd add onion to carrots & celery.



When you take out the chicken allow the broth to cool and skim off the fat.
That is far too much chicken for a soup.
Segment the chicken and keep at least half for a meal, I would use only a quarter.
Return the chicken and veggies and bring to the boil, and reduce the heat to simmer.
Check for taste and add salt if required.
I would use what ever I had, carrots, peas, corn, onion, celery (sp).

You didn't say your age so check with your mother that you can use the chicken, that could be for a couple of meals during the week.
