Strawberry Oatmeal Bars

1 1/4 cups all-purpose flour 1 1/4 cups quick cooking oats 1/2 cup sugar 1/2 teaspoon bakinpowder 1/4 teaspoon salt 3/4 cup butter or margarine, melted 2 teaspoons vanilla extract 1 cup strawberry preserves 1/2 cup flaked coconut In a bowl, combine dry ingredients. Add butter and vanilla; stir until crumbly. Set aside 1 cup. Press remaining crumb mixture evenly into an ungreased 13-in.x 9-in. x 2-in. baking pan. Spread preserves over crust. Combine coconut and reserved crumb mixture; sprinkle over preserves. Bake at 350 degrees F for 25-30 minutes or until coconut is lightly browned. Cool.

Reserve 1 cup and press the rest of the dough into a 9 by 13 greased baking pan.Preheat the oven to 400 degree and bake the crust for 10 minutes.

In a medium microwaveable bowl add condensed milk and mini chocolate and microwave for 1minute 30 seconds. Mix and pour this mixture into a prepared crust.

Mix reserved mini chocolate, chopped almond and 1 cup reserved dough in a small bowl and pour on th crust along with a scoop of the strawberry jam.

Preheat the oven to 375 degree and bake for 30 minutes.

Allow to cool for 1 hour, then cut strawberry chocolate bar in a 3 dozens size.

COCONUT CHOCOLATE BAR
1 cup unbleached all purpose flour1 1/2 cups old fashion oat meal1/3 granulated sugar1 can (14oz)396g condensed milk1 cup mini chocolate1 cup butter1 egg2 cups shredded coconut.Mix unbleached flour, oatmeal, egg butter and sugar, mix until it turns into a moist dough. Press it into greased 9 by 13 inches baking pan.Pre-heat the oven to 400 degrees and bake for 10 minutes, set aside.Mix shredded coconut, condensed milk and mini chocolate in a medium bowl, pour on the crust.Preheat the oven to 375 degree and bake for 30- 35minutes.Allow to cool for 1 hour. Cut into 3 dozen slices.





Chocolate Strawberries

5 ounces bittersweet chocolate, chopped 1 pint fresh strawberries with leaves
In a microwave-safe bowl, or in the top of a double boiler over simmering water, cook chocolate until melted. Stir occasionally until chocolate is smooth. Holding berries by the stem, dip each one in molten chocolate, about three-quarters of the way to the stem. Place, stem side down, on wire rack and chill in refrigerator until hardened.



use dried strawberry, chopped into small pieces. Re-hydrate with the chocolate pieces in bowl over a steaming pan, Do not use direct heat, or even direct contact with the boiling water to melt the chocolate pieces otherwise you will scorch the chocolate. all you want to do is melt it slowly and then let the strawberry infuse, and then re-set it. Always use good quality chocolate. at least 50% cocoa mass. this way you will be able to store the chocolate for some time. add a small amount of extra sugar if desired - to taste, but the natural sweetness of the strawberry should, in this case, counteract any aversion that the english palette has to high quality, and therefore sometimes perceived as "bitter" chocolate. Good luck. you can try this with many dried fruits, and even spices such as chilly and cinnamon ( I would use fine powder or good quality extract in these cases) Orange is superb. Blanch the zest to remove bitterness. dry slightly and chop into fine strands. Adding a few drops of Grand Marnier or Van-der-Hum or Cointreau etc.. will only give you a result that your friends will love you forever for. My mouth is watering now!



Why don't you make chocolate strawberry bark?

Buy a bag of freeze dried strawberries
pour them out onto a greased and papered cookie sheet
melt white, milk or dark chocolate melts (or chips) in the microwave
pour over the strawberries
place in the fridge until hard
crack them into shards
