What to do with the potato left over from making potato skins?!


Question: What to do with the potato left over from making potato skins?
I'm making potato skins for the super bowl tomorrow and I'm looking for a recipe to use the middle of the potato for after I scoop it out. Anybody have any good recipes or ideas?

Mash the potatoes with the butter, milk and chedder cheese until fairly smooth. Use a potato masher or a whisk. Mix in fried bacon bits bacon(browned but not totally crisp). Form balls about the size of large ice cream scoops, and place them on a greased baking sheet. Scrape the top and sides with a fork to make textured lines over the balls. Sprinkle about 1 tablespoon of Parmesan cheese over the top of each one.
Bake for 10 to 15 minutes a preheated( 350) oven on a greased baking sheet, or until cheese is golden brown.

These ae savory pancakes not sweet. You can serve them with sour cream, apple sauce, or your favorite jam or preserves, or with bacon.

Total Time: 29 minutes
Ingredients:
· 1/2 pound raw potato, grated
· 1/2 pound leftover, unseasoned mashed potatoes
· 1 medium onion, finely chopped
· 1/2 pound flour
· 1 egg, slightly beaten
· salt and pepper to taste
· milk
Preparation:
Mix the grated and mashed potatoes with the onion. Stir in the flour and egg. Preheat lightly greased griddle or frying pan. Add enough milk to potato mixture for a thin enough batter that will drop from a spoon. Use a 1/4 cup measure to spoon out batter onto griddle. Grill for 3-4 minutes on each side.



potato salad.... mmmmm!.. goes well with a super bowl meal.. fried chicken, potato salad.. potato skins, chips, salsa, dips...mmmm!

or freeze it and make something later.. potato soup..

make stuffed potato balls.... mash the potato dry (dont thin it down with butter or milk yet) and add some salt and pepper.. add just a little bit of butter (depending on the amount you have) just to make it sticky but not like mashed potatos, you still want it stiff...

then fry up some (not much, use only a cup of meat)ground meat with onion, garlic.. and add some spices like bbq seasoning, or mexican chili blend.. (garlic, onion, cayenne, salt, pepper, cumin, oregano).... then take a golf ball sized portion of potato.. roll into a ball,, poke your finger into one end making a hole and stuff it with a teaspoon of meat and seal the potato around it... then when you've got all of your potato stuffed into balls... take 2 bowls.. one with seasoned flour (salt/pepper) and one with egg and a little milk.... roll the potato in the flour dry, then dip in the egg, then back in the flour.. then set aside while heating up a pan of oil (1 inch oil). on med high.. fry the balls till golden brown, turning frequently.. shouldnt take but a couple min on each side.. then remove with a slotted spoon onto a paper towel lined platter.. these are so delish!.............



About a hundred years ago, when I was a kid, my mom would make potato patties. She'd add chopped onion and some butter to the potatoes and fry in patties about 4" by 1/2". Loved them then, haven't had them since.



You could make mashed potatoes or mash like for mashed potatoes and then make potato patties and brown both sides. Yum..... Or you could make Baked Potato Soup. Yummy
