What should I do with left over white rice?!
The rice is basmati, if that makes any difference.
So, suggestions?

Vegetable Fried Rice-------------------------------
Toss some garlic, onions, soy sauce and sesame oil in your frying pan, add your leftover rice and whatever veggies you have on hand, and voila - you have a new meal: vegetable fried rice! For variation, try adding pineapples, cashews, scrambled eggs, tofu and different sauces and spices. I always add a dash of sea salt and fresh lime juice too. Fried rice can be served either as an entree or as a side dish.

This is another great way to use up your rice if you've got lots and lots leftover, and is a low-fat and healthy way to include some veggies into your diet. Toss your leftover rice with your favorite vinaigrette or other salad dressing, some fresh herbs or spices and your favorite diced vegetables. Or, try one of the rice salad recipes below.
Rice and Bean Burritos-------------------------
Heat up a can of beans, add some hot sauce and your leftover rice, and you've got yourself a quick bean and rice burrito! Add in whatever burrito toppings you happen to have on hand, such as salsa, sour cream, guacamole, or maybe even some leftover cooked veggies
Stuffed Tomatoes with Leftover Rice----------------------
.Season your leftover rice and use it to make vegetarian stuffed tomatoes for a main dish or healthy side. Slice off the tops of your tomatoes, fill with a seasoned rice mixture, drizzle with olive oil and bake. It's that easy! This recipe would also work well for making stuffed bell peppers instead of stuffed tomatoes.
I always make this easy rice pudding with leftover rice.
2-3 cups leftover cooked rice(Basmati is good)
2 cups milk mixed with 2 tbsp cornstarch
1/2 cup sugar or less to taste
1/4 cup unsalted butter.
1 tbsp vanilla
raisins soaked in a 1/2 tbsp cognac(opt)microwave them for 1 minute
cinnamon for sprinkling on top (opt)
place first three ingredients in recipe in a pot and heat on medium
Stir and watch pudding until it thickens
remove from heat and add butter and vanilla , stir.
Serve warm.
What I do with leftover rice.
Rice pudding recipe
Ingredients
1 cup cooked long grain or basmati rice
1 cup whole milk
1/2 cup heavy cream
3/4 cup coconut milk
2 ounces sugar, approximately 1/4 cup
1/4 teaspoon ground cardamom
1 1/2 ounces golden raisins, approximately 1/3 cup
1 1/2 ounces chopped unsalted pistachios, approximately 1/3 cup
Directions
In a large nonstick saute pan over medium heat, combine the cooked rice and milk. Heat until the mixture begins to boil. Decrease the heat to low and cook at a simmer until the mixture begins to thicken, stirring frequently, approximately 5 minutes.
Increase the heat to medium, add the heavy cream, coconut milk, sugar, and cardamom and continue to cook until the mixture just begins to thicken again, approximately 5 to 10 minutes. Use a whisk to help prevent the cardamom from clumping. Once the mixture just begins to thicken, remove from the heat and stir in the raisins and pistachios. Transfer the mixture to individual serving dishes or a glass bowl and place plastic wrap directly on the surface of the pudding. Serve chilled or at room temperature.

Here's a recipe which you can modify according to your tastes:
Serves 4 to 6
This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.

Ingredients:
1 - 2 green onions, as desired
2 large eggs
1 teaspoon salt
Pepper to taste
4 tablespoons oil for stir-frying, or as needed
4 cups cold cooked rice
1 - 2 tablespoons light soy sauce or oyster sauce, as desired
Preparation:
Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.
Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.
Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.
When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

I use left over rice for a quick and easy breakfast. Warm the rice with a small pat of butter/margarine sprinkle with cinnamon/sugar and you're ready to go!
Also, I agree with the other "posters" stir fry is always better with leftover rice.
