My mother, who got it from her mother, who brought it here from Pennsylvania



JOHNNY CAKES
(Hoe Cakes, Skillet Cakes)

2 cups cornmeal
1 cup milk
1 tsp. salt
4 tbsp. butter
2 tbsp. boiling water

Cream the cornmeal, salt and butter together. Add the milk and enough water to make a moist but firm batter.

Drop by large spoonfuls onto a hot greased griddle and flatten slightly. When brown, turn over and cook the other side.

The original pancake. Serve with hot maple syrup or with honey and butter, or just with butter.

(I like to give mine a smoother texture by substituting A.P. flour for some of the cornmeal. Try 1/2 cup less cornmeal, and add the same amount of flour.)

1 egg2 c. white or yellow cornmeal1 tsp. salt1 1/4 to 1 1/2 c. milkBeat 1 egg. Stir in 2 cups white or yellow corn meal, 1 teaspoon salt, 1 1/4 to 1 1/2 cups milk (to make batter thick). Drop spoonfuls of batter onto a well-greased hot griddle and fry to a golden brown on each side. Stir batter occasionally to keep well mixed. Serve hot with butter.



I wnet to Belize one christams and ate Johnny cakes ALL day every damn day, they are so good!
I hung out in the cafe and drank tea with the johnny ckaes, my god, so good.

JOHNNY CAKES

2 lbs. Flour 1/4 lb. Shortening 4 tsp. Baking powder 2 tsp. Salt Cream from 1 coconut, or 1 tin Coconut Cream (8 oz.)

Method: Place flour in mixing bowl and add all dry ingredients. Work in shortening with fingers. Gradually add coconut cream and mix until dough handle easily without being too sticky, or dry. If too sticky, add a bit more flour. Knead until smooth. Cut into desired size (golf ball size works well) and shape into a ball. Let rest about 10 minutes, then flatten to about 1/2" thickness onto baking sheet. Prick top with fork four or five times.

Bake in preheated oven at 450 degrees F. until golden brown, or about 15 minutes. Once cooked split open and butter while hot.
