It is my favorite squash. The easiest thing to do with it is cut it in half length wise (not an easy task, the thing is very tough). Scoop out the seeds in the hollow and pitch them. Place it in the microwave for about 5 to 10 minutes depending on the power of the microwave. Might check it occasionally with a fork. When the fork goes through easily it is done. Take it out of the microwave, place a gob of butter in the hollow where the seeds were, some salt and pepper than mash it up with a fork. Some people add brown sugar, but I don't. It is ready to eat. And very easy too other than cutting it in half. I would suggest cutting it on a table saw but the chance of adding a finger to the squash is too great.
well i like butternut squash raviolis with a brown butter sauce and its very easy to make. first go and buy some won ton wrappers in the oriental section of your grocery store. then cut the squash in half and season it and roast it until its tender. scoop out the squash into a bowl and add enough butter and cheese ( your choice of cheese but i like a combo of riccotta and asiago and a sharp provolone mixed with a bit of black pepper and fresh parsley and mix until well blended. then you scoop a little bit into the wonton wrapper and seal with a little bit of water. then you start your brown butter sauce by first melting a stick of butter in a pan until its brown. in the mean time cook your wonton wrappers in boiling waterwhen they are done you simply drain them and toss them in with the butter. now with this butter sauce the things that you can add are endless like some onions cut up real fine like and some fresh herbs like parsley or basil or tarragon or whatever that you like. stir them until they are well covered and cooked through then enjoy them!!!!!!!

Cut it in half, scoop out the seeds, add a little butter, bake or microwave until fork tender. I always put homemade applesauce in squash. It's a good winter veggie.

Can be boiled, steamed, gilled or oven baked. It can also be used as an ingredient in stews and casseroles or pureed to make soup.
