best short bread recipe?!


Question: Best short bread recipe?
i need a good short bread recipe that i can bake from the things in my cupboard.

I personally love this one:

150g unsalted butter (softened)
75g icing sugar
pinch of salt
150g plain flour
75g rice flour or cornflour

1) Heat the oven to 150 degrees celsius / gas mark 2 (sorry, don't know it in farenheit)

2) Combine butter, icing sugar and salt in a food processor or mixing bowl. Mix until smooth.

3) Sift in the flour and the rice flour / cornflour. Keep mixing until the mixture forms a ball.

4) Knead until smooth, cut into two chunks and wrap in cling film. Refrigerate for 30 minutes.

5)Turn the dough onto a floured surface and roll to 1cm thick. Cut into desired shape (make sure they're all about the same size or some will cook quicker than the others) Place on a LIGHTLY greased baking tray and prick with a fork.

6) Bake for 10 minutes, turn the tray around and bake for another 5-10 minutes (or until golden brown all over)

7) Finnito! :)

There's a really easy one which is worth using it if you don't have much in the cupboards:
500g softened butter
200g caster sugar
2 tsp vanilla essence
500g plain flour

1. Preheat oven to 180 C / Gas mark 4.

2. Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.

3. Roll out to 1cm thickness and cut out desired shaped with biscuit cutters. Bake for 10 to 12 minutes.

Hope I helped! I love the first recipe as the biscuits come out really soft but the second one's great if you're in a rush.
