Can I use cream of tartar instead of cornflour?!


Question: Can I use cream of tartar instead of cornflour?
I'm making pavlova in food technology at school tomorrow but I ran out of cornflour. Is cornflour important? I know it's used to make the centre chewier but are there any other reasons?

I've read something about cornflour substituting cream of tartar, so could I use cream of tartar to substitute cornflour? Does vinegar also work in the same way as cornflour?

I would really appreciate if you could help me! :) I have to write a timeplan out for my practical as it's part of my GCSE Coursework and I'm really stumped!

Answers:

Cornflour is important, you can't use cream of tartar instead.
A classic pavlova has cornflour and white wine vinegar, they make the crust nice and dry and crisp while the centre stays soft.
Sorry, you'll have to find some.



Best to get the cornflour especially since you are being graded.
