There aren't many food safe colorings that will not change the flavor of the cake. If I didn't have red food coloring or beet juice and had a craving for red velvet cake, I would just do without. The taste will be the same. Better to do that than to add something that might change the flavor of the cake.
Do you have cake coloring? You normally use it to dye frosting, but it can work in cakes. If not you may just have to go out and buy some
pomegranate juice, saffron with milk or water, frozen raspberry (pureed) may work. whatever you've got. try just going out and buying some
