Question: Moms, what are you making for dinners this week?
I am tired of making the same things all the time. I was wondering if anyone had any fresh ideas.

During the winter I use my crockpot / slow cooker a lot. I use it to start soup bases when I'm at work and easily finish the soup when I get home.

Quickie fam favorite - Toss into crockpot before you leave for work...

2 lg cans of Cream of Mushroom soup...
Pork chops (with the fat trimmed off)
Mushrooms (fresh, canned of dehydrated)
garlic (fresh or powdered)
onion - (fresh diced -1 cu or dehydrated to taste)
a dash or two of liquid smoke...
Put the lid on and let it cook on low until you get back home. (low cook 8 hrs... high - 5 hrs)

This is deeeelish served over rice, pasta or mashed potatoes.

I always keep cleaned torn lettuce ready in a tupperware tub. I buy the grape tomatoes for convenience during the winter. I can whip up a salad in nothing flat to go with any meal. OR... turn that lettuce into a taco salad base in less then 20 minutes.

I love to cook, and even with working I still find it enjoyable. I think it's a fun challenge to see what I can make in short order when I get home.

Again.. in the winter I use my slowcooker/crock pot to do most of the work for me. I even have a recipe for slow cooker chicken and dumplings that is quite good. My hubby is an old farm raised guy and he said they tasted as good as his grandmothers Sunday "chicken and dumplings". ...lol So quick and easy ...

Years and years at the stove..lol



One of the things my son (almost 15) loves is meatloaf and mashed potatoes. We also likes chicken alfredo which I cheat and use Classico Four Cheese Alfredo and tweak it with wine, shallots, garlic and nutmeg. He thinks it is awesome he is getting wine in his food even though he knows the alcohol cooks out. Sometimes I take a pork tenderloin and slice into about 1 1/2" thick then pound it out to about 1/4" thick. Dust the pork in seasoned flour, dip in egg and then panko and fry. Serve on hamburger bun with fries, always a hit. I also fry seasoned tilapia fillets and fry them or wrap them in foil with butter, S &P, lemon slices and garlic and bake. I try to mix things up a bit so he doesn't get bored and try not to serve too many fried foods in a row. Hope this helps. I have other ideas but don't want to take up all the space.



my mum makes this amazing potato and bacon soup starting from a chicken soup recipe its so good sorry i dont have the recipe but maybe you can make it up!
a simple salad of avocado and tomato with basil is yummy and simple and some buttered bread for the soup is nice too.
you could try this tuna pasta dish where you cook as much pasta as you like, sieve it and place in in dish, mix with tuna, onion, mustard and salt and pepper and top with cheese and place it in the oven to crisp up! very simple but good!

Lemon Chicken:

Boneless chicken breasts (pounded thin and cut into bite sized pieces)
Flour
S & P to taste
Butter
Lemon

Dip each piece of chicken in flour, salt and pepper. (Just a light dusting).

Melt butter in a skillet and saute chicken until lightly golden on each side. Transfer to casserole dish.

Continue until all chicken is browned. Melt another stick of butter in pan and scrape up browned bits. Squeeze juice of one lemon over the pan and continue scraping until all bits are scraped up. Pour over chicken and then bake in oven at 325 degrees for 20 minutes.

Serve with salad, rice and a vegetable of your choice.

The kids love this!!



This time of year soups and chili are great. Theres a million different ways to make that sort of thing. A beef stew or roast in the crock pot are foolproof and easy. To mix it up sometimes we have breakfast for dinner. The kids think thats fun. I use the food network, all recipes and cooks.com for ideas too. Hope this helps.



Well, my Mummy (yes-I still call her that, please don't tease me, she does not suit a Mum) always cooks me a balanced meal. So
casserole, with a side of buttered bread
steak with quick chips and mayo
lamb cutlets with aubergine relish
tomato tart with pesto
