Cream of tomato

Ingredients
1/3 cup minced yellow onion
2 Tablespoons butter
2 Tablespoons flour
1/2 teaspoon basil
1/2 teaspoon oregano
1 1/4 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1 Tablespoon tomato paste
1 Tablespoon ight brown sugar
1 [10 1/2 oz.] can condensed beef consommé
1 cup milk
1 [1 lb. 12 oz.] can tomatoes [do not drain]

Popped popcorn [optional garnish]

Method
Stir-fry onion in butter in a large heavy saucepan 3-5 minutes until limp, blend in flour,
herbs, salt, and pepper, then stir in tomato paste, light brown sugar, consommé, and
milk and heat, stirring constantly, until thickened and smooth. Put tomatoes through a
food mill or puree by churning 15-20 seconds in a food processor fitted with the metal
chopping blade; add to pan and simmer, uncovered, 12-15 minutes--do not allow to boil.
Ladle into soup bowls, garnish with popcorn, and serve piping hot.



Here's a basic recipe:

Ingredients:

6oz can tomato paste
1c milk
1/2c water
black pepper
salt (optional)

Pour water into a medium sauce pan. Empty tomato paste into pan. Pour a bit of milk into the tomato paste can and pour into saucepan (gotta get all the good stuff out of the can!). Pour remainder of milk into pan. Add a pinch of salt and pepper. Heat on medium-low heat, stirring occasionally to prevent milk from scorching and to blend ingredients. Do not boil. Serve warm. Garnish with parsley, croutons, saltines, cheddar or Parmesan cheese.

Those are the basics, but it's pretty bland. I recommend adding some of the following spices:

ground celery seed (one of my favorites)
onion powder
garlic powder
oregano
basil
dash of Tabasco
cayenne pepper
cumin (for a Mexican flavor)
sage
ginger

Other substitutions:

1) I like to make it with powdered milk. The generally unpleasant flavor of powdered milk is lost in the tomato and other spices. It makes for a healthy soup without having to use fresh
milk.

2) Soy milk can also be substituted for fresh cow's milk, but do be sure to use unflavored soy milk.
