I used to cook lima beans for an elderly couple I sat for, and the man liked to soak the beans overnight- he said it improved the flavor. I would soak them in cold water overnight, drain, put them in a large pot with ham hocks, and cook them on medium low for a couple of hours. In the crock pot, just put in the soaked beans, ham hocks, fill it 3/4 full of water, and cook all day on low. You can add chicken boullion or boullion cubes for flavor.

Are they the small lima beans or the large ones? Have you presoaked the beans to soften them or not? Those things would matter, but there are lots of recipes for cooking lima beans with ham hock in a slow cooker here:

Those recipes might include just beans as a side dish or with bits of the ham hock, or as stew with more liquid and perhaps other items or as a soup.
