Tom’s Meatloaf

The combination of the lean ground beef and the milk replicates veal.

Ingredients
1 1/2 pounds lean ground beef
1/2 cup crushed Ritz crackers
1 cup shredded Vidalia onion
2 teaspoons Lawry’s Seasoned Salt
2 large eggs, beaten
1/4 cup ketchup
2 tablespoons Worcestershire sauce
3/4 cup milk
3 to 4 slices bacon, cut in half

Heat oven to 350?

Stir the ground beef, crushed crackers, and onion mix in a large bowl until well combined. Whisk the eggs, ketchup, and Worcestershire sauce in a separate bowl until smooth. Mix the eggs mixture and the milk into the meat mixture until everything is thoroughly combined (the mixture will be soft and loose). Transfer mixture to a 9 x 5 loaf pan.

Cover the top of the meatloaf with the halved bacon along the short side from one end to the other.

Bake in preheated oven until the meatloaf reaches 160? on an instant read thermometer inserted into the center of the meatloaf, 45 to 60 minutes.

You need 3 basic things for ingredients for meatloaf: 1-Ground meat (all beef, half beef & half pork, ground turkey etc) 2- Egg for binder and 3 Bread crumbs of some sort, they can be either the canned kind, flavored or plain, crushed crackers, oatmeal, or (my favorite) torn up white bread pieces. After that you can basically add anything you like, usual things are chopped onion, a little ketchup or tomato sauce, a packet of Onion soup mix, salt, pepper, any kind of chopped veggie you like...whatever, skies the limit! You just mix it all together, make it into a loaf shape, put it on a cookie sheet or other baking dish, some people use a loaf pan, but I don't like to make mine in that because then the grease doesn't have anywhere to go when it cooks out of the meat. Bake it in the oven at about 425 for 40 to 60 minutes. You can glaze it with ketchup and brown sugar mixed together at about the halfway point, or some people do half ketchup and half mustard...there are a million things you can do with a meatloaf.

Here is how I make my Cheeseburger Meatloaf
2lbs ground meat (I use one lb ground beef and one lbs ground turkey)
A package of onion soup mix
Garlic Powder to taste ( I use quite a bit b/c I like the flavor
Salt & Pepper
About a cup of small cubes of cheese or shredded whatever you have
And bacon bits - I buy the real bacon bits but if you really wanted to you could cook the bacon yourself
I mix all that together and and do a loaf form on a baking dish and bake 45-60 mins. Or you could bake in a muffin pan to make individual servings About 10-15 mins before it is done I put ketchup all over the top.
