Yes make white truffles the same way you made your other truffles. The white will be much sweeter than the chocolate ones you just made.
The reason the truffles are a bit bitter is they type of chocolate that you used. If you rolled them in powdered sugar they would taste a bit sweeter. You could use Hershey bars so they are a bit sweeter but I think you should "play" with the chocolate blend. Use half the type you did and half a sweeter type. See if you like those results then adjust from there. You can also adjust with flavorings as well, a bit of almond extract or amaretto or try some espresso if you like coffee flavor, a bit of juice from maraschino cherries will give a chocolate cherry flavor. The flavors are endless.
1 Yes~ go ahead and replace the heave cream w milk, half and half, etc if its a tablespoon or so, as long as its not a 1/8 cup or more. Never use water, although I assume you know it ruins chocolate.
#2 If your chocolate truffles were a bit bitter, try a different kind of chocolate, sweet, semi-sweet, chips whatever is in the baking aisle that you like. But if you recipe specifically calls for baking chocolate, pick a sweet one. I don't know about Hersey's, I have used it for the 1-2-3 fudge, but never for my truffles.
#3 If you love your truffle recipe try your white chocolate in it.
This is the link to the recipe for white chocolate truffles I made this Christmas. I made virgin ones and ones with Bailey's Irish Creme :) I liked it because it was so easy and looked and tasted like they took forever to make.
