Cuz they can.
The pimento in the olive does several things,
flavor,
looks prettier than a hole in the olive
assures that the pit has been removed, in order to stuff the pimento in the olive the pit has to be out.

Are you aware that olives are stuffed by hand? there is no machine that stuffs olives.



it fills the hole left by de-seeding the olive, and it's a nice subtle complimentary flavor

SRSLY? this is the best troll question you could think of? this isn't even a troll question this is the kind of question a 16 year old scene girl from New Jersey would ask sincerely because she's sick and tired of the extra calories in her martinis.
